For Peyton, because I can't find the web page with the recipe I used.

3 cups flour
1/3 cup sugar
1.5 tsps baking powder
0.5 tsps baking soda
1 tsp salt
1.5 sticks of unsalted butter, chilled
1 cup of buttermilk (or whole milk with a splash of lemon juice)
dried fruit (optional)
demerara sugar for dusting

Preheat oven to 400 degrees.
Combine flour, sugar, baking powder, baking soda and salt in a bowl. Slice pats of butter into dry ingredients then cut in with pastry blender (or rub in with hands) until mixture resembles a coarse meal. Make a well in the center of dry ingredients and pour in buttermilk. Mix with a spoon or spatula until well combined. Add in dried fruit if you're using it. The dough will still be quite wet, if it's too wet to handle at all mix in a little more flour. Divide the dough into two portions, pat them into rounds about 1 inch thick then slice pie-wise into eighths. Place the wedges on cookie sheet lined with parchment or a silpat, sprinkle with demerara sugar. Bake for 15-20 minutes. Remove and let cool a bit before eating. Best served warm with butter and jam (or LEMON CURD).

Note: I splodged the rounds right on the silpat and managed to get one set of wedges a little bit separated and the other set only scored, but they came apart well after baking.
