This year's adventures with apples:
Apple Butter
1/2 peck Cortland
1/2 peck MacIntosh
1 cup water
1 c. sugar
4 Tbls. lemon juice
1 tsp. Cinamon
1/2 tsp. ground cloves
Makes 5 pints
Apple Sauce
1/2 peck Cortland
1/2 peck Gala
1 cup water
1 c. sugar
4 Tbls. lemon juice
Makes 4ish quarts
I highly recomend a crockpot set on "low" for cooking down the apple butter. You can leave it covered all night, or uncoverd for a few hours to reduce the apple pulp to the right consistency.
