Big Dish o Chicken Jambalaya

2 boneless skinless chicken breasts
3 chicken andouille sausages
1 large yellow onion
1 large green Italian pepper
2 cloves garlic
2 cups chicken stock
olive oil
1 cup brown rice
Seasonings to taste (when do I ever actually measure this stuff?):
several springs fresh thyme
basil
oregano
hot paprika
cayenne pepper
seasoned salt
garlic powder
onion powder
Cube/chop the meats and brown in some olive oil in a Dutch oven, remove from pot. Chop the onion, garlic, and green pepper and add to pot. Cook until softened. Add meats back in with seasonings and chicken stock. Bring to a simmer. Add rice. Cook covered until rice has absorbed all the liquid, about 45 minutes.
I'm pretty pleased with how this turned out. I would have preferred a pork sausage, but the chicken sausage was in the freezer.
