Weekend cooking - Savory Dishes

Meat loaf (adapted from http://www.tastymeatloafrecipes.com/easymeatloaf.htm)
• almost 2 lbs of ground beef, pork, veal combined
• 1/2 cup milk
• 1 tablespoon Worcestershire sauce
• 1/4 teaspoon dried sage
• 1/2 teaspoon salt
• 1/2 teaspoon dry mustard
• 1/4 teaspoon fresh ground pepper
• 2 cloves garlic, minced
• 1 small onion, finely chopped
• 1/2 cup dry bread crumbs
• 1/2 cup ketchup
Directions: Preheat oven to 350 degrees. Combine all ingredients except ketchup in a large bowl, and mix well. Place mixture into two ungreased mini loaf pans. Spread ketchup or sauce over the top of the meatloaf. Cook for about an hour or until loaves register 160 degrees. Let sit for 5 minutes before slicing and serving.
Cioppino with Sausage (from The Big Book of Soups & Stews, by Maryana Vollstedt)
Ingredients
1 1/2 T Olive Oil
1 cup yellow onion, chopped
2 cloves garlic, minced
1 cup dry white wine
1 28 oz can of tomatoes, chopped
1 cup fish stock
1 t salt
1/4 t thyme
1/4 t oregano
1/2 t sugar
1/2 lb. kilbasa sausage, cut into bite size pieces
1/2 lb. bay scallops
1/2 lb. large shelled shrimp
1 cup minced parsley
Directions: In large Dutch oven heat oil, add onion and garlic and saute until tender. Add wine and boil for about 1 minute. Add remaining ingredients except seafood and parsley, simmer over low heat, uncovered, for 20 minutes. Add remaining ingredients and cook until seafood is firm and shrimp are pink, about 5 minutes. Serve with sourdough baguette.
