Rack o ribs, cut in to sections small enough to fit in pressure cooker
1/2 pint tomato jam
1.5 cups water
1 bullion cube
1/2 bermuda onion sliced thin
Using your open pressure cooker, brown the ribs then remove from the pot. Drain excess fat. Add onions, water, bullion cube. Brush ribs with tomato jam and add back to the pot. Close pot, following manufacturer's instructions, cook at high pressure for 15 minutes. Turn off pot. Let pot reduce temperature/steam naturally, about another 5 minutes. Remove ribs and cook sauce down if you like. Ribs will be falling off the bone tender.
This was accompanied by a spicy mango slaw: savoy cabbage, grated carrots, bermuda onion, 1/2 mango tossed with vegetable oil, cider vinegar, brown sugar, lime juice, salt, hot sauce to taste.
