Ginger Clementine Marmalade - 2014

2.5 lbs clementines
2 lbs sugar
4 oz. crystalized ginger (home made from young ginger)
3/4 cup blood orange juice
1/4 lemon juice
1 lemon peel
4 cups water
yeild = 12 4 oz jars and 2 1/2 pints.
I maybe should have cooked it longer. It's looking a little loose in the jars.
